Following successful experiences in exporting fresh agricultural products, Ousccompany recently has entered the export market for a different product, dried tomatoes, processed from tomatoes grown in its modern greenhouses.
Tunisia’s share of dried tomatoes export market
As in many As in many agricultural products and industries related to them, the most important exporter of dried tomatoes in the region is Tunisia.
Tomato production and processing represents a very important agri-food sector in Tunisia. Surface-areas planted with seasonal tomatoes during the 2020 season covered approximately 16,500 hectares, against 17,700 hectares in 2019. With the agronomic yield increasing by 16% compared to last year, from 60 mT/ha to 70 mT/ha, the production of tomatoes in turn increased to 1.20 million tonnes, against 1.10 million tonnes in 2019, thus recording a 9% increase.
In Tunisia there are more than twenty structured enterprises and a large number of production facilities that belong to the informal sector.
At the industrial level, the 2020 tomato season ended with the processing of nearly 961,000 tonnes of fresh tomatoes, exceeding the last record of 930,000 tonnes in 2015.
Tomato processing is carried out by 26 canning plants, with a total processing capacity of 36,000 tonnes of fresh tomatoes per day.
Indeed, Tunisia has a long tradition in this sense: for a long time, sun-dried tomatoes were part of the indigenous culinary habits. But over the decades the customs have changed; Dried tomatoes are rarely used in cooking today. Nevertheless, recently with the increase in demand for local products, the sun-dried tomato is experiencing a certain “revival”. 20% of national production is now destined for the local market.

Culinary Uses: Dried tomatoes are versatile and can be used in a variety of recipes. They are commonly added to pasta dishes, salads, pizzas, and sandwiches. They can also be rehydrated in water or broth for use in soups and stews, or blended into sauces and pestos.
Nutritional Benefits: Dried tomatoes are rich in vitamins A and C, antioxidants, and dietary fiber. They are a low-calorie food that can enhance the nutritional profile of meals.
Storage: Dried tomatoes should be stored in a cool, dry place, preferably in an airtight container. If packed in oil, they should be refrigerated to maintain freshness.
